Testing the new dripper on a busy Saturday

Forty pour-overs, two baristas and one new rib profile. What we learned before the Ridge dripper went on sale.

The Ridge dripper spent six weeks on the bar next door before it earned a place in the shop. The question was simple: does the water drain at the same speed every time?

The first version had twelve ribs and drained too fast; the brew was thin. Version three, with sixteen shallower ribs, landed at a steady 2:45 for a 300 ml pour with a medium grind.

If the baristas stop reaching for the plastic one, we are done.

By the fourth Saturday the plastic dripper had been put in a drawer. That is the only review we needed.
